Well, COVID is still a thing, so once again we did a scaled-back gathering with fewer people in an outdoor setting. Even a global pandemic can’t get in the way of me and pie! Pie Day was a great opportunity to catch up with some of my fellow pie-loving friends, many of whom due to COVID I hadn’t seen since last year’s Pie Day! And of course, there was much scrumptious pie eating to be done.
Savory Pies
Nick made a Tomato Cheese Pie. Everyone knows my rule that pizza doesn’t count as pie, but of course he pushed the boundary. While it definitely looks like a pizza, at least it was in a pie crust haha.
Kris made Thai Curry Chicken Hand Pies. I love Thai curry chicken, and I love hand pies. So put them together and it’s a match made in pie heaven.
Cindy made Hamburger Pie. Underneath the cheesy topping was a delicious ground beef filling. It really did taste like a cheeseburger in pie form.
John made a Squash and Onion Tart. It took him longer to make than he expected (so he was late to the party haha), but the tart was so beautiful with the different colors of squash, potato and onion, and it had a super yummy caramelized onion base.
Sweet Pies
Sheila made a Shaker Lemon Pie. A shaker lemon pie uses the whole lemon, which I’d never had before, but I liked the flavor and the added texture.
Sheana made Salted Caramel and Peanut Pie. It had a pretzel crust and a homemade toffee topping that was to-die for. She brought the leftover toffee, which I was happy to take home to snack on.
Anthony made Malted Milk Ice Cream Pie. His ice cream is always delish, so having it in pie form is a double treat. And I loved the aesthetic of his caramel dribbles!
I made Coke Float Pie (here’s my Guessipe). I guess I got back on my drink-themed pie kick after a hiatus last year. I know root beer floats are more typical, but I prefer Coke so that’s what I went with. Especially with just a touch of fresh Coke poured on top, it did taste a lot like a Coke float.
