I have a friend who works for a cheese company (I know, lucky me!). He came over for a dinner party one day and left me with a huge amount of fantastic parmesan cheese. I figured I better find ways to use it before it went bad. Not a bad problem to have, right? I happened to have some zucchini, and wondered how it would work to coat them in parmesan and herbs and put them in the air fryer. My boyfriend’s response – “You should make these all the time!“. I don’t make them ALL the time, but they are in the rotation pretty often since I can throw them together in less than 10 minutes and I like them as an accompaniment to pizza and pasta.
Guessipe
- 2 zucchini, quartered lengthwise
- 1 TBSP peanut oil
- 1/4 cup grated Parmesan
- 1/4 tsp marjoram
- 1/4 tsp basil
- 1/4 tsp oregano
- 1/4 tsp garlic powder
- salt and pepper
Mix together Parmesan, marjoram, basil, oregano, and garlic powder.

Toss the zucchini in the peanut oil, then evenly coat with the Parmesan mixture.

Air fry at 400 degrees F for 7 minutes. Salt and pepper to taste.
