No Peruvian meal is complete without Aji Verde (Peruvian green sauce), so of course I had to make some for my Peruvian dinner party. It’s a refreshing sauce that is automatically delivered to your table at most Peruvian restaurants, and I like to put it on basically everything I order. Which is why I love that making it is as easy as throwing all the ingredients into a food processor.
Guessipe
- 1 bunch cilantro, bottom of stems removed
- 1 jalapeno, minced
- 3 cloves garlic, minced
- 15 mint leaves
- 1/2 cup mayo
- 1/4 cup Cotija cheese
- 2 TBSP Aji Amarillo paste
- 2 TBSP lime juice
- 1/2 tsp salt
Place all ingredients in a food processor and blend until smooth.

Great as a dipping sauce for bread or dressing for vegetables.
