My friend who gave me the bundt pan started asking when he’d be getting another bundt cake. I’ve had an itch in my brain about olive oil cake ever since I had an amazing one at Osteria Mozza, and that was years ago! It was finally time to try my hand at making one. I happened to have some apples too, and I think it’s the apple glaze that made this cake.

- 1 1/2 cups sugar
- 5 eggs
- 1/2 tsp salt
- 1 TBSP lemon zest
- 2 tsp vanilla
- 1/4 tsp cardamom
- 1 cup olive oil
- 2 cups flour
- 1 TBSP baking powder
- 1 lb apples, peeled and cut into 1/2-inch pieces
GLAZE
- 2 TBSP butter, softened
- 1/2 cup apple juice, reduced on stove to 1/4 cup
- 2 cups powdered sugar
In a mixer at medium speed, whisk sugar, eggs, and salt until fluffy.
Mix in lemon zest, vanilla, and cardamom.
With mixer at medium speed, slowly pour in olive oil.
In a bowl, whisk together flour and baking powder. Using a spatula, fold flour mixture into wet mixture.
Fold in the apples.
Pour the batter into a well-greased and sugared bundt pan. Bake at 350 degrees F for 1 hour.
While the cake is baking, whisk together all Glaze ingredients until well combined.
Let the cake cool 10 minutes, then remove from pan and pour half the glaze over the cake.
Allow the cake to cool completely, then pour the remaining glaze over the top.
