Avocado is a wonderful fruit that should have many more uses than guacamole and avocado toast. Its natural creaminess lends itself very nicely to making a delicious creamy salad dressing, with the healthy fat!
Guessipe
- 1 avocado
- 1 bunch cilantro
- juice from 1 lemon
- 3 TBSP honey
- 1/4 cup cane vinegar
- salt and pepper to taste
- 1/2 cup olive oil
Blend avocado, cilantro, lemon juice, honey, vinegar, salt, and pepper in a food processor until smooth.
With the food processor still running, slowly add the olive oil until well blended. Depending on your preference for thickness, you can also add in a bit of water.
This bright, creamy dressing is a great way to elevate a simple salad. Here I used it on a mix of romaine lettuce, cucumber, tomato, and pear.
