Cookbook Club – Celebrate!

So I got married recently! The Cookbook Club did an event in celebration of our wedding, so we used Sheila Lukins’s Celebrate! cookbook. To see the whole celebratory spread, go to my Cookbook Club site. For now – my dish!

When I saw this recipe for chicken marinated in soy sauce, lemon juice, cumin, and turmeric then cooked in white wine, I knew Bali Chicken was my pick.

I rinsed the chicken, patted it dry, then rubbed it in a mixture of soy sauce, lemon juice, olive oil, cumin, turmeric, and salt. I let it marinate in the fridge overnight.

Thirty minutes before cooking, I took the chicken out of the fridge, arranged it in a baking dish, and poured white wine over it.

I baked the chicken at 350 degrees F for 45 minutes, basting it occasionally. Then I turned the heat up to 375 degrees F and baked it for another 15 minutes, basting a couple more times.

I sprinkled the chicken with mint leaves, and was ready to celebrate!

Maybe I had over-hyped this dish in my head, because while it was tasty it didn’t blow me away. I have lots of other chicken recipes I’d pick over this one.
