Bruschetta

I love bruschetta, but can’t bring myself to order it in a restaurant because it is so easy and inexpensive to make at home. The first time I made this bruschetta for my boyfriend he said, “This is the best bruschetta I’ve eaten in my life… and I’ve eaten a lot of bruschetta!”.

Guessipe

  • 2 large heirloom tomatoes or 6 campari tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup parmesan, grated
  • 1 TBSP balsamic
  • 2 tsp high quality olive oil
  • salt and pepper to taste

Toss all ingredients together.

Serve over toasted crusty bread. Extra good if the bread is toasted with garlic olive oil!
