“Best Caesar Salad I’ve ever had in my life” – according to my friend who thinks Caesar Salad is the epitome of all salads. He also thinks he hates mustard, so I waited until after he was done eating his second bowl before I told him the dressing definitely contains mustard. Despite that, he keeps coming back for more. So yeah, I guess it’s pretty good.
Guessipe
- Romaine lettuce, torn into bite-sized pieces
- hard-boiled eggs
- parmesan cheese, grated
CROUTONS
- 3 slices sourdough bread, cut or torn into bite-sized pieces
- 2 TBSP olive oil
- 1/2 tsp garlic powder
- 1/4 tsp salt
DRESSING
- 1/2 cup plain Greek yogurt
- 4 TBSP mayonnaise
- 4 tsp lemon juice
- 2 tsp dijon mustard
- 1 tsp soy sauce
- 1 tsp rice vinegar
- 1 tsp sugar
- 1 garlic clove, grated
- 1/2 cup parmesan, grated
- salt and pepper to taste
Mix all Croutons ingredients together until each bread piece is well coated. Bake at 400 degrees F for 7 minutes. Flip them over and bake an additional 7 minutes until golden brown.

Mix all Dressing ingredients together until well combined.

Toss the lettuce in your desired amount of dressing. Top with croutons, hard-boiled egg wedges, and grated parmesan.
