I occasionally get a load of kumquats from a neighbor and enjoy just popping them whole into my mouth as a snack. But one day shortly after receiving a bag of kumquats, I needed to make a dessert for a dinner party. Hunting around in the fridge, I came upon the kumquats and some heavy cream I needed to use up. I whipped up this candied kumquat cremeux (this sounds super fancy, but is basically a creamy, less airy mousse), which my friends declared their favorite dessert, and ever since I’ve been making it whenever I can get my hands on kumquats.
Guessipe
- 1/2 cup water
- 1/2 cup sugar
- 1/4 cup honey
- 8 oz kumquats, sliced into rounds
- 2 cups heavy cream
- 1 cup powdered sugar
- 3 cups plain Greek yogurt
Bring the water, sugar, and honey to a boil over medium heat.
Add the kumquats and simmer, stirring occasionally, until it becomes a thick syrup (about 15 minutes).
Whip the heavy cream and powdered sugar until stiff peaks form.
Fold in the yogurt with a spatula.
Divide half of the cream mixture evenly between 8 glasses or ramekins. Add a spoonful of candied kumquats with syrup to each. Divide the remainder of the cream mixture among the glasses/ramekins. Add another spoonful of candied kumquats with syrup to each.
