In preparation for going out of town, I was using up everything I could from my fridge. That led to this Cheesy Garlic Jalapeno Frittata, which my boyfriend could not stop talking about. I usually have these ingredients (you can use any mix of cheeses you want, but I’ve noted one of my fav combos below), so the Cheesy Garlic Jalapeno Frittata has become a convenient dish to whip up when I need something easy but sure to please.
Guessipe
- 1 TBSP olive oil
- 1 onion, chopped
- 8 cloves garlic, sliced
- 1 jalapeno, minced
- 8 eggs
- 1/4 cup milk
- salt and pepper to taste
- 1 cup shredded mozzarella
- 1/2 cup shredded cheddar
- 1/2 cup feta crumbles
- basil leaves for garnish, chiffonade cut
Cook the olive oil and onion in a 10-inch oven-safe pan over medium heat until the onion is translucent. Add the garlic and jalapeno and cook one more minute.
In a bowl, beat together the eggs, milk, salt, pepper, and 3/4 cup of the mozzarella.
Pour the egg mixture over the onion mixture in the pan. Top with the remaining mozzarella, cheddar, and feta.
Bake at 400 degrees F until the center is set and the edges are golden (about 15 minutes). Garnish with basil.
