I wanted to make a cherry cheesecake flavor of ice cream, but didn’t want to have to make a whole cheesecake just to break it up as a mix-in. So I decided I could make cheesecake flavor ice cream, then mix in graham cracker pieces and swirl in store-bought cherry preserves. It worked wonderfully, and was so easy!
Guessipe
- 8 oz cream cheese
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 TBSP lemon zest
- 1 tsp vanilla
- 1/4 tsp salt
- 1 1/2 cups graham crackers, broken up
- 1 cup cherry preserves
Blend the cream cheese, heavy cream, milk, sugar, lemon zest, vanilla, and salt in a food processor until smooth. Refrigerate for a few hours.
Churn the chilled cream mixture in an ice cream maker until the ice cream crawls up the sides of the bowl (about 20 minutes). Add in the graham cracker pieces and churn another minute.
Transfer 1/3 of the ice cream to a chilled glass container. Dollop 1/3 of the cherry preserves onto the ice cream. Add another 1/3 of the ice cream and dollop more cherry preserves. Add the rest of the ice cream. Dollop the remainder of the cherry preserves. Swirl with a knife.
Press plastic wrap onto the surface of the ice cream, and freeze for at least 4 hours before serving.
