Chinese Chicken Salad

I picked up a rotisserie chicken at Costco, and as I was driving home remembered my mom’s Chinese Chicken Salad. She used to roast her own chicken, but then discovered the Costco rotisserie chicken and never went back. At $5 for a whole chicken, I don’t think it costs much more than it cost my mom back then, and it sure makes this Guessipe an easy win. I can’t believe I have neglected my mom’s Chinese Chicken Salad for so long.

Guessipe

  • 3 lb roasted chicken, deboned and shredded
  • 1 head iceberg lettuce, thinly shredded
  • 1 bunch green onions, thinly sliced
  • 1 bunch cilantro, chopped
  • 1/4 cup sesame seeds, toasted
  • 2 oz Chinese bean thread noodles, fried

dressing

  • 2 tsp lemon zest
  • 2 TBSP lemon juice
  • 1/4 cup sugar
  • 1 tsp mustard powder
  • 1 tsp salt
  • 4 tsp soy sauce
  • 1/2 cup olive oil

Add all Dressing ingredients to a small jar, cover, and shake well. Let stand for at least 1 hour.

Combine chicken, lettuce, green onions, cilantro, and sesame seeds in a large bowl. Shake the Dressing again before pouring over the salad. Toss until well combined. Sprinkle the fried noodles over the salad to serve.
