It’s March 14, and that means… Pi(e) Day! I’m back to my drink-themed pies again, with a pie inspired by the flavors of a Coke Float. I prefer Coke over Root Beer, but you can go with whatever your heart desires.
Guessipe
- 1 pie crust
- 2 cans Coke
- 1/4 cup whole milk
- 1 3.4-oz package instant vanilla pudding mix
- 1 cup heavy cream
- 1/3 cup powdered sugar
Bake the pie crust according to the package instructions. Chill.

Over medium high heat, reduce 1 can of Coke to a thick syrup. Chill overnight. Whisk together the Coke reduction, remaining can of Coke, milk, and pudding mix.

Whip together the cream and sugar until stiff peaks form. Fold the cream mixture into the Coke mixture.

Pour the filling into the pie crust. Decorate with some additional whipped cream if you want. When I served the pie, I freshly opened another can of chilled Coke and poured just a spoonful on top of each slice, which gave the pie an awesome creamy bubbliness just like when you drink a Coke float!
