Corn Muffin Pudding is one of my mom’s go-tos if she needs to whip up something quick to bring to a party. Everyone loves it and is surprised to hear that it’s another one of those fantastically easy recipes that involves nothing more than mixing together 5 ingredients and throwing in the oven. The 5 ingredients are things you can keep around, so you’ll always be ready to throw this corn muffin pudding together if you need it.
Guessipe
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 1 cup corn muffin mix
- 1 cup plain yogurt (can use sour cream instead)
- 1 stick butter, melted
Combine all ingredients.
Pour into greased casserole dish.
Bake at 350 degrees F for 1 hour.
My friend Colin had the genius idea to pretty up the presentation with dried edible flowers. It’s like a savory birthday cake!
