I love this Creamy Broccoli Salad for a picnic or a day at the beach. It doesn’t have any lettuce to get soggy, and actually gets better with some time soaking in the sweet creamy dressing. It’s got so many layers of flavor and texture, and lots of good for you veggies!
Guessipe
- 1 lb broccoli, cut into bite-size pieces
- 1 cup tomato, diced
- 1/2 cup red onion, diced
- 1/2 cup carrot, diced
- 1/2 cup dried cranberries
- 1 cup cheddar cheese, cubed
Dressing
- 1/2 cup mayonnaise
- 2 TBSP honey
- 2 TBSP apple cider vinegar
- Salt and pepper to taste
Put all Dressing ingredients in a bowl and mix well.
Combine all other ingredients, pour the Dressing over them, and mix until well coated. You can eat this broccoli salad right away, but I like to let it chill in the fridge for a couple hours so the broccoli nicely soaks up all the dressing.
