The base of this recipe was inspired by a cucumber dill salad that my mom used to make when I was growing up. I freshened it up with the addition of red onion for a bit of bite and blueberries for a sweet pop. So good on a summer day!
Guessipe
- 4 Persian cucumbers, sliced
- 1 small red onion, thinly sliced
- 1 cup blueberries
- salt and pepper to taste
DRESSING
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 1 TBSP dried dill
- 1/2 tsp dry mustard
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Place the sliced cucumbers in a colander and season with a teaspoon of salt. Allow the cucumbers to drain for 30 minutes.

Nuke the sugar and vinegar for 30 seconds, then add all of the other Dressing ingredients and stir until well combined.

Toss together the cucumbers, red onion, and dressing. Marinate at least 1 hour.

Add the blueberries. Salt and pepper to taste.
