Cookbook Club – Friendsgiving
As has now become tradition, for our November Cookbook Club we skipped the cookbook and instead did a Friendsgiving meal, where each person cooked either a favorite Thanksgiving dish or one they’ve been wanting to test out. At a party awhile back, someone had made chocolate chip cookies with pretzels in them. With the salty, crunchy bits perfectly complementing the sweet dark chocolate, I couldn’t get enough of them. I’d also been hearing lately about chocolate pudding cookies, where pudding mix is added to cookie dough to make a very soft, chewy cookie. I had been wanting to try baking both, so decided to combine the ideas and try my hand at making double chocolate pretzel cookies.
I whisked together flour, baking soda, and salt, and set aside.
I creamed together butter, sugar, and brown sugar.
I mixed in a packet of chocolate pudding mix.
I added in eggs and vanilla and beat until combined.
I added the flour mixture and beat until combined.
I stirred in chocolate chips.
I scooped cookie balls onto a parchment lined baking sheet, and topped each ball with pretzel pieces.
I baked at 350 degrees F for 10 minutes.
The cookies didn’t come out as chewy as I’d hoped they would be, but the pretzel pieces were definitely a winner. I’ll probably skip the pudding mix in future, but will definitely be adding pretzels to my chocolate chip cookies again.
