My friend’s cheese company supplies restaurants, so when he brings me cheese the quantities are laughably large for a home cook. And of course with my aversion to wasting food, I have to use it all up before it goes bad. Not that I’m complaining about having to figure out what to do with massive amounts of insanely good cheese. When you have such high quality fresh mozzarella, you can do almost nothing with it and serve up a dish that people will rave about. I did this one at a dinner party and the first plate was gone so quick that I ended up having to do several more. Good thing it was so easy. Clearly I didn’t have to worry about using up all that fresh mozzarella!
Guessipe
- fresh mozzarella
- fresh basil leaves
- extra virgin olive oil
- flaky sea salt
Arrange overlapping slices of fresh mozzarella. Top with fresh basil leaves. Sprinkle with good olive oil and flaky sea salt.
