This is a really simple dish made of bean thread noodles that my family ate a ton when I was growing up, probably because it is so quick to make using ingredients we usually had in the house.
Guessipe
- 1 package (10.5 oz) bean thread noodles
- 2 eggs
- oil for stir-frying
- 1 TBSP soy sauce
- chicken broth
- salt and pepper
Soak the noodles in room temperature water for 30 minutes.

Scramble the eggs with salt and pepper. Set aside.

Drain the noodles. Stir fry the drained noodles with a sprinkle of salt for 20 seconds.

Add soy sauce and enough chicken broth to cover the noodles (about 1 1/2 cups). Simmer until the noodles absorb all the liquid (about 1 minute).

Top with the scrambled egg and serve. So easy!
