It’s Girl Scout Cookie season! I went to a party and ended up coming home with boxes of Do-Si-Dos, Thin Mints, and Trefoils. Having already consumed many cookies, I decided to use some of the cookies to make Girl Scout Cookie ice cream. Cookies n Cream is my favorite childhood ice cream, so what could be bad about Girl Scout Cookies n Cream? Definitely a Guessipe I’ll use again the next time I get suckered into buying Girl Scout Cookies. It was fantastic with the three cookies I used, but you could use whatever Girl Scout Cookies you end up with.
Guessipe
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 tsp vanilla
- 1/4 tsp salt
- 2 cups Girl Scout Cookies, roughly chopped
Whisk together the heavy cream, milk, sugar, vanilla, and salt until the sugar dissolves. Refrigerate for a few hours.

Churn the chilled cream mixture in an ice cream maker until the ice cream crawls up the sides of the bowl (about 20 minutes). Fold in the Girl Scout Cookies.

Transfer the ice cream to a chilled glass container. Press plastic wrap onto the surface of the ice cream, and freeze for at least 4 hours before serving.
