Cookbook Club – The Silver Palate Cookbook
Happy new year of Cookbook Club! Our first event of 2024 used the American classic Silver Palate cookbook series – The Silver Palate Cookbook, The Silver Palate Good Times Cookbook, and The New Basics. To see our full first feast of the year, check out my Cookbook Club site. For now – my dish!
All this cold, rainy weather got me in the mood for a cozy, comforting soup. The Greek Lemon Soup sounded like just the thing.
I brought chicken broth to a boil, then added rice and simmered until the rice was just tender.
In a bowl, I whisked egg yolks and lemon juice together.
When the rice was done, I whisked two cups of the broth into the egg yolk and lemon juice mixture. Then I whisked that mixture back into the rice soup, and heated until just steaming.
I added salt and pepper to taste, then served garnished with a lemon slice and chopped parsley.
Warming, yet also bright and refreshing – perfect for a rainy day… and so easy that I made it again three days later!
