Heart of Palm Salad with Cranberry Molasses Dressing

Mission: Molasses continues. I was recently visiting my uncle’s Hawaiian farm and mentioned that I love heart of palm. He said it just so happened he needed to clear out a couple palm trees, and proceeded to harvest me some fresh heart of palm! While I was sad to learn that the only way to get heart of palm is to cut down a palm tree (that explains why it’s expensive!), I have to admit I really like eating it. I definitely wanted to make good use of this gift, and I thought the smoky sweet flavor of molasses would make a good dressing for the heart of palm. I looked in my fridge, saw some cranberry juice, and figured that might also add some nice tang. I savored every bite.

Guessipe

  • heart of palm
  • tomato
  • sweet onion
  • parsley

dressing

  • 2 TBSP cranberry juice
  • 1 TBSP molasses
  • 1 TBSP sherry vinegar
  • salt and pepper to taste

Stir together all Dressing ingredients until well combined.

Cranberry Molasses Dressing

I used this dressing on a salad of heart of palm, tomato, sweet onion, and parsley. It was delish! But you could use it on whatever your favorite salad ingredients are.
