I used to make this delicious spicy sweet chicken with skin-on bone-in chicken thighs, until one day I was in the mood to make them and happened to only have boneless skinless thighs on hand. One of the things I enjoyed about the dish was the crispness of the skin, so I decided to try using cornflakes as a replacement. It was such a success that I’ve never looked back – the cornflakes absorb the flavor of the sauce really well and provide great crunch and chew at the same time. Plus there’s no bone to eat around.
Guessipe
- 4 boneless skinless chicken thighs
- 1/4 cup honey
- 2 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp cayenne
- 2 cups cornflakes, crushed to half size
Mix together the honey, chili powder, garlic powder, cumin, salt, paprika, and cayenne.
Coat the chicken with the honey mixture. You will use about half the mixture.
Spread the cornflakes on a plate. Press the chicken into the cornflakes to coat. Place the chicken on a baking sheet and press any remaining cornflakes onto the tops of the chicken pieces. Drizzle the remaining honey mixture on the chicken.
Bake at 400 degrees F for 20 minutes.
Try not to eat them all at once!
