I was at a friend’s for dinner and she made a salad with a really tasty dressing. When I asked her about the dressing, she said it was mostly hummus with a little honey, apple cider vinegar, and some other seasonings. I kept thinking about that dressing for weeks after the dinner, so decided I should try my hand at making a version of it. I was really happy with how it came out and have been using it on all kinds of salads since.
Guessipe
- 1/4 cup hummus
- 2 TBSP honey
- 1 TBSP apple cider vinegar
- 1 tsp juice from kalamata olives jar
- 1/4 tsp garlic powder
- salt and pepper to taste
Stir all ingredients together until well combined.
You can use this dressing on whatever your favorite salad ingredients may be. Here I used it on iceberg lettuce with tomatoes, carrots, cucumber, kalamata olives, pickled red onions, and shredded mozzarella. It was yum.
