Instant Pot Pinto Beans

I rarely cook beans, mostly because it takes FOREVER. But not with an Instant Pot! I finally got one and have been experimenting, with varying levels of success. It’s been a process, gradually figuring out cooking times, liquid quantities required, and seasoning when you can’t taste as you go. This was the first Instant Pot Guessipe that was a keeper – my boyfriend said it’s one of the best things I’ve ever made. Wow – I almost felt a little offended, since I sort of randomly just threw in spices I had available and hoped for the best. I’ve listed the spices I used, but honestly I think you could mix and match with whatever you happen to have, especially if you don’t have the seasoning/spice mixes.

Guessipe

  • 1 cup pinto beans, soaked for at least 6 hours
  • 1 TBSP olive oil
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 2 cups vegetable broth
  • 1/2 tsp garlic and herb seasoning
  • 1/2 tsp 24 Herbs and Spices
  • 1/2 tsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp garlic salt
  • salt and pepper to taste

With Instant Pot in Sauté mode, heat the olive oil and cook the onions and garlic until the onions begin to soften.

Stir in the pinto beans, vegetable broth, garlic and herb seasoning, 24 Herbs and Spices, paprika, cayenne, and garlic salt. Close and seal the Instant Pot lid and cook at high pressure for 1 hour.

Quick release the pressure. Salt and pepper to taste.
