I love the crunch of jicama. It is great for make-ahead salad, because it stays crisp in the dressing. The sweetness of the apples brings out the sweetness of the jicama, and contrasts nicely with the bite of the lime and vinegar. This jicama slaw is so refreshing I find myself popping into the fridge to snag bites until it’s all gone.
Guessipe
- 1 small jicama, peeled and julienned
- 1 Fuji apple, chopped
- 1/4 red onion, thinly sliced
- 1 TBSP toasted sesame seeds
- 1 bunch cilantro, chopped
Dressing
- 1/4 cup red wine vinegar
- juice from 2 limes
- 1 TBSP sugar
- 1 tsp Hawaiian salt seasoning
- 1/4 tsp cayenne
- salt and pepper to taste
Mix together the jicama, apple, red onion, and sesame seeds in a large container.
Stir together all dressing ingredients until well combined.
Pour the dressing over the slaw, top with the cilantro, and stir until well coated. Refrigerate overnight.
