I had a big container of sour cream, I had key limes, and I had a dinner party I needed to bring a dessert to. It was an intimate dinner party for 4, so I thought there would be leftovers of this Key Lime Cake, but I ended up having to make another one the next day so we could have more to eat at home. Works with regular limes too if you don’t happen to have key limes.

- 1 cup sour cream
- 2 eggs
- 3/4 cup sugar
- 1/4 cup olive oil
- 3 TBSP key lime juice
- 1 TBSP key lime zest
- 1 tsp vanilla
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt

- 1/2 cup sour cream
- 1 cup powdered sugar
- 2 TBSP key lime juice
Beat the sour cream, eggs, sugar, olive oil, key lime juice, key lime zest, and vanilla together until well incorporated.
Whisk together the flour, baking powder, baking soda, and salt. Add to the wet ingredients in two batches, mixing until just incorporated.
Pour the batter into a well-greased and sugared bundt pan. Bake at 350 degrees F for 40 minutes.
Allow to cool for 20 minutes before removing from the bundt pan. While the cake is cooling, stir together the sour cream, powdered sugar, and key lime juice until smooth. Once the cake has cooled completely, drizzle the glaze over it.
