I’m always tempted to get Kimchi Fried Rice when I see it on a menu, but then I remind myself how easy it is to make at home. It’s great for using up leftover rice, and all of the other ingredients are things I pretty much always have on hand. So it’s a perfect weeknight meal when I haven’t been grocery shopping in awhile but need some home-cooked deliciousness. My boyfriend loves it, and he doesn’t even like kimchi!
Guessipe
- oil for stir-frying
- 5 cloves garlic, sliced
- 1 small red onion, chopped
- 2 cups kimchi, chopped
- 1/4 cup kimchi juice
- 4 cups refrigerated leftover rice
- 2 TBSP soy sauce
- 1 TBSP sesame oil
- salt and white pepper to taste

- furikake
Stir fry the garlic and onion over medium heat until the onion starts to soften.
Add the kimchi and kimchi juice and stir fry until the juices are almost dried out.
Add in the rice and stir fry until the rice softens and heats through.
Stir in the soy sauce and sesame oil. Spread the rice flat across the bottom of the pan, turn the heat to medium-high, and allow to cook undisturbed until the rice starts to get crispy on the bottom.
Stir with salt and white pepper to taste. Top with fried eggs and furikake.
