Granola is delicious, and as it turns out, very easy to make at home. I’ve added cornflakes to my Guessipe to give it some nice crunch. For the fruit, I used dried mangoes because I adore them, but you can use whatever dried fruit floats your boat. I also like dried cranberries, and sometimes go half and half. Your house will smell so good when you’re baking this granola!
Guessipe
- 2 cups rolled oats
- 2 cups cornflakes
- 1 cup dried mango, chopped
- 3 TBSP brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1 tsp vanilla
Mix together the oats, cornflakes, mango, brown sugar, cinnamon, and salt.
Combine the oil, honey, and vanilla.
Pour over the oat mixture and mix until well coated.
Spread on a baking sheet in a thin layer. Bake at 300 degrees F for 15 minutes. Stir and bake another 10 minutes.
Let cool completely. Mix into yogurt, use as a topping for vanilla ice cream, or just crunch it straight into your face!
