My cheese guy came through again, this time with a giant bag of shredded mozzarella. I also have an excessive supply of frozen meatballs at the moment, because for some reason my boyfriend keeps buying them every time he goes to the store. I decided to try making an appetizer of meatballs on mozzarella cheese crisps. It came out great and was very easy to make, so it’s definitely going into the rotation.
Guessipe
- 1 1/2 cups shredded mozzarella
- 1/2 tsp garlic powder
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 18 frozen meatballs, heated according to package instructions then cut in half
- 3/4 cup of your favorite tomato sauce, heated
- parmesan cheese, grated
- fresh basil leaves
Combine the garlic powder, basil, oregano, salt, and red pepper flakes.

Divide the mozzarella into 12 equal portions. Place 4 of the portions into a non-stick pan. Sprinkle the seasoning mixture equally on each of the cheese piles. Cook over medium-high heat until one side gets crispy and brown. Flip over and cook the other side until crispy and brown. Repeat with the remaining cheese portions.

Top each cheese crisp with 3 meatball halves, 1 TBSP tomato sauce, a sprinkle of parmesan cheese, and some basil.
