Do you remember when it was your birthday and your mom would send you to elementary school with cupcakes for everybody in the class? Well, my mom would make these awesome mini cherry cheesecakes, which made my birthday the most looked-forward-to of the whole school year. These are easy to make, but look fancy, taste great, and are guaranteed to impress at kid and adult parties alike.
Guessipe
- 12 cupcake liners
- 12 vanilla wafers
- 8 oz cream cheese, softened
- 1 egg
- rounded 1/3 cup sugar
- 1 1/2 tsp lemon juice
- 1/2 tsp vanilla
- 1/2 can cherry pie filling
Put cupcake liners in a muffin tin, and place one vanilla wafer in the center of each liner.
Beat the cream cheese, egg, sugar, lemon juice, and vanilla until light and fluffy.
Divide the cream cheese mixture evenly between the 12 cupcake liners.
Bake at 375 degrees F for 20 minutes.
Add cherry topping – three cherries and a bit of sauce for each cheesecake.
