Cookbook Club – Lucky Peach Bonus Recipe

The thing that I really liked about the Lucky Peach Presents 101 Easy Asian Recipes cookbook was that the recipes were so simple (see all the dishes from the Lucky Peach Cookbook Club event on my Cookbook Club site). The Miso-Glazed Eggplant sounded great, and epitomized simplicity. For the Cookbook Club I wanted to push myself a bit more and did the Roasted Squash with Red Glaze, but I saw eggplant was on sale when I was at the Asian market buying ingredients, so decided to pick up a few of those as well.

The Miso-Glazed Eggplant recipe only has 5 ingredients, including the eggplants and oil. That’s my kind of recipe. After cutting the eggplants in half lengthwise, I coated them with oil and baked for 10 minutes. Then I smeared the cut side with a mixture of miso and mirin and put them back in the oven for another 10 minutes.

Then sprinkle with sesame seeds and you’re done. That’s it! I added some chopped green onion, just because I happened to have some. The recipe called for Japanese eggplant, but the Chinese eggplants I used worked just as well and they were on sale.
