I was looking for more ways to use up that delish fresh mozzarella from my friend, and came up with this mozzarella and crispy salami focaccia sandwich that used up all kinds of leftovers from pizza night (including this Pizza Dough Focaccia). I see a lot of these sandwiches in my future.
Guessipe
- focaccia
- olive tapenade
- kewpie mayo
- salami
- fresh mozzarella slices
- tomato slices or roasted red pepper
- balsamic
- flaky sea salt
Heat salami slices in a non-stick pan on medium high until they crisp up.
Slice the focaccia in half. Spread olive tapenade on one half and kewpie mayo on the other half.
Layer the crispy salami, tomato or roasted red peppers, and fresh mozzarella on one half of the focaccia. Drizzle with balsamic and sprinkle with salt. Cap off your sandwich with the other focaccia slice.
