If you love garlic like I do, then this is a simple pasta dish that focuses on the wonderful garlic flavor, with mushrooms to add some extra umami. You can use whatever kind of pasta you want.
Guessipe
- 1 lb pasta
- 1/4 cup olive oil
- 10 cloves garlic, sliced
- 8 oz mushrooms, sliced
- 1/2 cup parmesan, grated + more for garnish
- salt and pepper to taste
Boil pasta in salted water to just before al dente, reserving 1 cup of cooking liquid.
Heat olive oil in a skillet over medium. Add garlic and cook until fragrant.
Add mushrooms and cook until they release their liquid and become tender.
Stir in the cooked pasta, parmesan, salt, and pepper, gradually adding as much of the reserved cooking liquid as you need.
Serve with additional parmesan on top.
