Yes, I’m posting this on April Fool’s Day… but no, this is not a joke. Thanks to COVID-19 we’re all living in this new shelter-in-place world, and apparently everyone has decided to get into bread-baking. As a result that I never would have predicted for a global pandemic, all the grocery stores appear to be sold out of yeast. I didn’t intend to get on the bread bandwagon anyway, but I have been trying to avoid going to the grocery store by using whatever I’ve got in the pantry. By lucky happenstance, I had some pancake mix that made awful-tasting pancakes. What, you may be wondering, is lucky about that? Well, pancake mix has leavening agents, which it turns out work for making bread when you don’t have yeast. I had my doubts that this experiment would work, but I was determined to find a way to use up that pancake mix. And the bread ended up being so popular in my house that I’ve been asked to make it three times in the last three days. Luckily, it’s super quick and easy to whip up – no kneading or rising time necessary.

- 1/2 red onion, sliced
- 7 cloves garlic, sliced
- olive oil, salt, pepper, other seasoning
- 1 cup pancake mix
- 1 cup flour
- 1 tsp salt
- 1 cup milk
- 1 TBSP butter
- 1/2 cup cheddar, cubed
- 1/2 cup cheddar, shredded
Saute the onion with any seasonings you like. Simply using salt and pepper works fine, but feel free to add in whatever flavors you’re in the mood for. Once the onion is soft, add the garlic and continue to cook until the garlic is golden brown.
Combine the pancake mix, flour, and salt. Stir in the cubed cheddar and garlic/onion mixture.
Melt 1 TBSP butter in a Le Creuset or cast iron skillet.
Pour the melted butter into your flour mixture (don’t worry about getting it all out – the butter that remains will keep your bread from sticking to the skillet). Add the milk and stir until a dough ball forms.
Transfer the dough ball to your skillet. Bake at 300 degrees F for 15 minutes.
Top the bread with the shredded cheddar. Turn the oven up to 400 degrees F and bake for about 25 more minutes.
When the crust is golden, your bread is ready!
