Cookbook Club – Cooking for Jeffrey
For July’s Cookbook Club, we used Cooking for Jeffrey: A Barefoot Contessa Cookbook by Ina Garten. I made the Parmesan & Chipotle Popcorn. You can get a sampling of what else Ina Garten has been cooking for Jeffrey on my Cookbook Club site. For now – my dish!
There’s something about eating popcorn while watching a movie that just fits. Maybe it’s nostalgia from being a kid in the movie theater working my way through the big tub of popcorn in my lap. Now with Netflix and chill, I want to recreate that experience while snuggled under a blanket at home on my couch, but that warm movie theater popcorn generously drizzled with liquid butter is hard to match. So I was interested to see if Ina Garten could provide the solution with her Parmesan and chipotle popcorn.
While my microwave popcorn was popping, I melted butter, grated Parmesan, and measured out salt and chile powder.
I put the hot popcorn into a bowl, poured on the melted butter, and added the cheese and seasonings.
I tossed well, and voila… Parmesan and chipotle popcorn!
I love that this recipe uses microwave popcorn and is ready in about 5 minutes. The picture in the cookbook looked way redder than my popcorn came out, but I’m guessing they dramatized the photo for publishing aesthetics because I used the amount of chile powder called for in the recipe and several people at the Cookbook Club party commented that the popcorn was nice and spicy. A tasty treat for a movie night in!
