Parmesan Fried Eggs

Ever buy a nice chunk of Parmesan to grate over a pasta dish, and then wonder what you could do with the remainder? Use it to make this awesome Parmesan fried eggs breakfast, which will feel and sound fancy if you’re making brunch for someone, but is actually so easy to make that you could just whip it up for yourself on a random weekday morning as well! The Parmesan makes a salty crispy layer like a decadent chip, and is so good with the runny yolk.

Guessipe

  • 1 TBSP bacon grease
  • 1/4 cup heavy cream
  • 1/2 cup Parmesan, grated
  • 1/4 tsp oregano
  • 1/4 tsp pepper
  • 2 eggs
  • salt and pepper to taste

Melt the bacon grease in a small pan on medium-high.

Mix together the cream, Parmesan, oregano, and pepper.

Add this mixture to the pan, cooking a couple minutes until the whole mixture is bubbling.

Crack 2 eggs into the pan, and cook for a few more minutes, until the egg whites are set but the yolk is still runny. Salt and pepper to taste.
