In my family, close family friends are “aunts” and “uncles”, and my Aunt Chaz was as much family as any of my blood relatives. This Guessipe is in memory of her. She was Hawaiian, and one of her secret recipes was lilikoi (Hawaiian passion fruit) butter. I have never been able to find or make any quite as good as hers, but this is as close as I’ve been able to get. Everyone who has tried this Passion Fruit Butter raves about it, so I think Aunt Chaz would be proud.
Guessipe
- 1 cup sugar
- 2 eggs
- 3/4 cup passion fruit pulp
- 4 TBSP butter, cubed
In a heat-proof bowl, whisk sugar and eggs together.
Place over a pot of boiling water set to medium-high heat (don’t let the bowl touch the water). Whisk in the passion fruit pulp.
Once well combined, stir in the butter.
Continue to cook, stirring constantly, until thick enough to coat the back of a spatula (about 10-15 minutes). Allow to cool then store in an airtight container in the fridge. So good on cake, cookies, pancakes, cheesecake, ice cream… pretty much anything!
