I had some leftover meatballs from when I made Meatball Cheese Crisps, and I had some end-of-season peaches that were ok but not the peak of sweetness we experienced a few weeks ago. Plus my basil plant has been doing really well lately. So I decided a savory dish might be a good use for the peaches, and tasty Peach Basil Meatballs were born.
Guessipe
- 15 frozen meatballs, heated according to package instructions
- 2 peaches, diced
- 1/4 cup madeira wine
- 1 TBSP lime juice
- 1 TBSP soy sauce
- 1/2 tsp garlic powder
- 1/4 tsp ground ginger
- 1 bunch green onions, sliced
- salt to taste
- 1 cup fresh basil leaves, torn
Over medium heat, simmer the meatballs and peaches in the madeira with a pinch of salt until the peaches get tender.

Stir in the lime juice, soy sauce, garlic powder, ground ginger, and green onions. Cook for one more minute, then remove from heat.

Add basil leaves, salt to taste, and serve over rice with more basil sprinkled on top for garnish.
