A guest had brought over some grocery store chocolate chip cookies when we had a party. The cookies weren’t great to eat on their own, so pretty much the whole container was left. I can’t bear to throw food away, so I thought they might work as an ice cream mix-in. I decided to try making a peanut butter flavored ice cream base, which turned out to be a great vehicle for those cookies!
Guessipe
- 1 1/3 cup heavy cream
- 1 1/3 cup whole milk
- 3/4 cup sugar
- 3/4 cup peanut butter
- 1 tsp salt
- 1 tsp vanilla
- 2 cups chocolate chip cookies, broken into pieces
Whisk the heavy cream, milk, sugar, peanut butter, salt, and vanilla until smooth. Refrigerate for a few hours.
Churn the chilled cream mixture in an ice cream maker until the ice cream crawls up the sides of the bowl (about 20 minutes). Fold in the chocolate chip cookie pieces.
Transfer the ice cream to a chilled glass container. Press plastic wrap onto the surface of the ice cream, and freeze for at least 4 hours before serving.
