I wanted to make a cake for my boyfriend’s birthday, but as you might know I’m on Team Pie, so I wasn’t excited to make a typical birthday cake. What I came up with is actually a giant brownie pretending to be a cake… shhh, don’t tell my boyfriend because he loved it! It’s rich enough that even he wasn’t able to eat it all in one sitting, though it didn’t last more than a few days because he was constantly going back to the fridge to snag another piece.
- 1 stick butter
- 3/4 cup semi-sweet chocolate chips
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 2 eggs
- 1 tsp vanilla
- 2/3 cup flour
- 1/4 cup cocoa powder
- 1 tsp salt
- 1 tsp instant espresso
- 1/4 cup crunchy peanut butter
Melt the butter and chocolate in the microwave in 30-second increments.
Whisk in the sugar and brown sugar.
Whisk in the eggs one at a time, then the vanilla.
In a separate bowl, whisk together the flour, cocoa powder, salt, and instant espresso.
Add the flour mixture to the wet mixture and stir until a thick batter forms.
Spread the batter in a greased 9-inch springform pan. Microwave the peanut butter for 30 seconds, then dollop spoonfuls of the warmed peanut butter around the top of the batter.
Swirl the peanut butter into the batter using a spatula.
Bake at 325 degrees F for 35 minutes.
Let brownies cool for 10 minutes, then refrigerate. Eat it straight out of the fridge – it’s super good cold!
