I threw this breakfast biscuit together one morning using whatever I could scrounge up from the fridge. It was such a hit that it has since become a breakfast staple.
- 1/4 cup thinly sliced red onion
- 1 tsp rice vinegar
- 1/4 tsp salt
- 1 cup spinach, torn into bite-sized pieces
- 1 TBSP pesto
- 1/8 tsp pepper
- tomato slices
- garlic salt
- eggs
- shredded cheddar cheese
- biscuits (I’ve tried making my own, but honestly the ready-to-bake canned biscuits are so good and easy)
- garlic aioli
Toss the red onion in the rice vinegar and salt. Allow to sit for at least 15 minutes.

Add spinach, pesto, and pepper to the red onions and mix well. Sprinkle the tomato slices with garlic salt.

Cook eggs to your liking. I prefer fried over easy on a layer of cheddar cheese, seasoned with salt and pepper.

Spread garlic aioli (here’s my Guessipe) on the bottom half of your biscuit.

Layer on the pesto spinach mixture, a tomato slice, an egg, and the biscuit top.
