Traditionally a trifle is made up of a fancy cream custard, sponge cake or lady fingers, and fruit compote. This is my poor man’s version of a trifle – much easier to whip up with no cooking involved and using ingredients you could easily have around. But the result is a fancy-looking dessert that you can bring to a party, and no one ever complains!
Guessipe
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 2 cups plain Greek yogurt
- 20 oz can crushed pineapple
- mini vanilla wafers
Whip the cream until soft peaks form, then add in the powdered sugar.
Continue whipping until stiff peaks form, then stir in the yogurt by hand until combined.
In wine glasses – layer cream mixture, then pineapple, then vanilla wafers. Repeat until you’ve used up all your ingredients. This will fill 4-6 wine glasses, depending on how big your glasses are.
Top with a decorative little mound of pineapple with a wafer on top!
