Cookbook Club – The Elements of Pizza

In June, we did a special event in partnership with the LA Bread Bakers, using their outdoor wood-fired pizza oven! We used The Elements of Pizza by Ken Forkish for dough and sauce recipes and topping combos, and also came up with our own pizza creations. Well, actually it wasn’t just my dish. The Pizza Marinara was a team effort. Halina made the dough, Shayna made the sauce, and I provided the toppings. So really I had the easiest part of the job.

After Halina rolled out the dough, I spread on the sauce, and sprinkled oregano and olive oil-coated garlic. Interestingly, this pizza doesn’t have cheese, so I was curious to try it.

The pizza then went into the blazing hot wood-fired oven, where it cooked in about 5 minutes!

The final step was to sprinkle olive oil and sea salt, and artfully arrange some anchovies… voila, pizza marinara!

Pizza Marinara turned out to be dead simple to make, and a pretty good pizza for not having any cheese. Ours was pretty salty though, so if your dough is salty I’d suggest using a sweet sauce and holding off on the added sea salt until tasting.
