Cookbook Club – Holiday Year in Review 2021

Our December Cookbook Club is traditionally a year in review event where we pick recipes from any of the cookbooks we’ve used that year. But because of COVID we were only able to gather for about half the year. That meant we had fewer cookbooks to choose from, so we also let people bring off-book dishes. With all the COVID craziness, people were super excited for this party. Go to my Cookbook Club site to see our biggest Cookbook Club event to date. For now – my dish!

I decided to stick with tradition and pick a recipe from one of the cookbooks we used in 2021. Revi had made Quick Stewed Eggplant with Coconut from In Bibi’s Kitchen, and it was delicious. So I decided to add that dish to my repertoire.

I combined eggplant, red onion, green bell pepper, garlic, jalapeño, turmeric, salt, and coconut milk in a large pot.

I brought to a boil, then covered and simmered until the eggplant was tender.

I salted to taste and it was ready to serve. It doesn’t get much simpler than that!
