Ramen Salad

I’m not gonna lie… instant ramen is delicious. It was one of my favorite snacks as a kid, and it was only later in life that I discovered it has almost no nutritional value. But it’s still delicious. So use it to make this super easy salad, and you get the flavor you love in a brightly colored and healthy dish!

Guessipe

  • 1 head of red cabbage, shredded
  • 6 green onions, diced
  • 1/2 red onion, thinly sliced
  • 1 can corn
  • 2 cups frozen peas
  • Noodles from 3 ramen packages
  • 2 avocados, cubed
Dressing
  • 1/2 cup rice vinegar
  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • Seasoning packets from 3 ramen packages

Mix together the cabbage, green onions, red onions, corn, and peas in a large container. Carrots add nice color as well. Feel free to add in other veg!

Break up the dry ramen noodles and sprinkle over the veggies.

Put all Dressing ingredients in a microwave-safe container and microwave for one minute. Stir until well combined.

Ramen Salad dressing

Pour the hot Dressing over the salad and stir until well coated. Refrigerate overnight. Top with avocado and serve.
