When I was a kid, one of my favorite snacks that my dad and I would eat together was peanut butter on Ritz crackers. As an adult, I discovered that I could coat Ritz cracker peanut butter sandwiches in chocolate and sprinkle with sea salt to make a more “elevated” treat. With four ingredients that I usually have on hand, this is one of my go-to’s when I need to bring something to a party. It’s always a crowd-pleaser.
Guessipe
- 48 Ritz crackers
- peanut butter (I prefer chunky, but creamy works too)
- 1 3/4 cup semi-sweet chocolate chips
- flaky sea salt
Arrange 24 Ritz crackers on a parchment-lined baking sheet.
On each cracker, dollop about 1 TBSP of peanut butter, then top with another cracker and gently press down to spread the peanut butter evenly between the crackers.
Microwave the chocolate chips for 90 seconds, then heat in 30-second additional increments, stirring between each increment until the chocolate is melted.
Dip each peanut butter sandwich in the chocolate to coat, using two forks to smooth off any excess chocolate and transfer back to the baking sheet.
Sprinkle each cookie with flaky sea salt. Refrigerate.
