Roasted Garlic Lemon Broccoli

This roasted broccoli works really well as an accompaniment to a rich pasta dish, with the lemon giving it a nice brightness. The roasting crisps the garlic and develops some nice crispy bits on the broccoli as well.

Guessipe

  • 2 heads broccoli, cut into pieces
  • olive oil
  • salt
  • pepper
  • 3 cloves garlic, minced
  • 1 TBSP lemon juice
  • 1/2 tsp lemon zest
  • 1/2 tsp red pepper flakes
  • 1/2 cup parmesan, grated

Toss the broccoli with olive oil, salt, pepper, and the minced garlic. Spread on a baking sheet and bake at 425 degrees F for 15 minutes.

Whisk the lemon juice, lemon zest, and red pepper flakes with 2 TBSP olive oil.
