I couldn’t stop thinking about the molasses yogurt dressing in my Harissa Roasted Broccoli with Molasses Yogurt Dressing. I decided it would also be good over carrots roasted with turmeric, cumin, and coriander. I managed to get 2 pieces before my boyfriend gobbled up the rest.
Guessipe
- 1 lb carrots, halved lengthwise
- 3 TBSP olive oil
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- salt and pepper to taste
- molasses yogurt dressing
On a baking sheet, toss the carrots, olive oil, turmeric, cumin, and coriander. Salt and pepper to taste.

Bake at 450 degrees F for 15 minutes.

Transfer the carrots to a serving dish, also scraping up the bits of seasoning from the baking sheet. Dollop with molasses yogurt dressing and serve.
