Cookbook Club – Dining In

When I think of sweet potatoes, what comes to mind is the Thanksgiving casserole topped with marshmallow goo that is more tooth-achingly sweet than most of the desserts. If you can’t tell… not a favorite of mine. But when I saw this Roasted Sweet Potatoes with Hot Honey Browned Butter recipe, I thought it might be a dish that could change my mind about sweet potatoes.
I poked the sweet potatoes all over with a fork and roasted them until I could see sugar caramelizing on the poked spots.
When the sweet potatoes were almost done, I swirled butter in a pot over medium heat until it started to bubble and brown.
I stirred in honey, apple cider vinegar, red pepper flakes, salt, and pepper and removed from the heat.
I slit the sweet potatoes in half lengthwise, poured the browned butter mixture over them, and sprinkled with flaky sea salt.
That easy! And I’ll just say… I am now on team sweet potato!!
